Our recipe for Macadamia-Crusted Grouper is one of our favorite and one of the most delicious seafood dishes I have ever tasted. Although nothing matches the delicious dish from the famous Doc Ford's restaurant- we gave it our best try!
Recipe- Macadamia Crusted Grouper
Yields: 4 Servings
Prep time: 30 minutes
Cook Time: 15-20 minutes
Ingredients
- 4 (8-ounce ) grouper fillets
- 3 cups of macadamia nuts, ground
- 3 cloves garlic, chopped
- 3 Tbsp. chopped fresh basil
- 3 Tbsp. chopped fresh cilantro
- ¼ cup all purpose flour
- 2 eggs, beaten
- olive oil for frying
- Salt & Freshly ground black pepper, to taste
- Lemon wedges for serving
Coconut-pineapple rum sauce
- 1 cup coconut cream
- 1cup pineapple juice
- 1/4 to 1/2 coconut rum, to taste
Instructions for Macadamia Crusted Grouper
Make the coconut-pineapple rum sauce
1) Combine the pineapple juice and coconut rum in a saucepan over low heat and continue to stir until the sauce is reduced. Consider adding in the coconut cream last to avoid turning brown. Allow it to simmer and not boil.
2) Remove from heat and allow to cool to room temperature. The sauce will thicken as it cools
How to Prepare the Grouper
1) Prepare the coating: Place the macadamia nuts, garlic, basil, and cilantro into a blender or food processor. Pulse until the nuts are finally chopped, being careful not to over-process into a paste. Spread the mixture on a plate.
2) Set up a dredging station: Place the flour on one plate and the beaten eggs in a wide, shallow bowl.
3) Season the fish: Pat the Grouper fillets dry with paper towels. Season each side with salt and pepper.
4) Coat the fillets: Dredge each fillet first in flour, shaking off any excess. Dip the floured fillet into the beaten egg, allowing any extra to drip off. Finally, press the fillet into the macadamia nut mixture, making sure to coast both sides evenly
5) Cook the fish: We cook our Grouper on our Evo Grill in the outdoor kitchen seasoned with avocado oil for a high smoke point. This seasoning tastes delicious and is healthy. In your outdoor kitchen, a flat top grill can also be used with the same seasoning. Cover the bottom of the grill with the avocado oil and heat over medium-high heat. Place the Grouper fillets in the pan and fry for about 3-5 minutes per side or until golden brown and cooked through.
Serve the Grouper
1) Place a Grouper on each plate
2) Spoon the coconut-pineapple rum sauce generously over the top
3) Serve immediately with a lemon wedge on the side.
For a healthy and elegant presentation serve with a mixture of Jasmine Rice, Quinoa, Arugula, Red Peppers and Yellow Squash all topped with the Coconut-Pineapple Rum Sauce
